  1. Cut chicken into pcs and boil in about 1 gallon of water. Remove and debone. Cook okra, onions, bell pepper and tomatoes in oil slowly for about 30 min or possibly till okra is not slimy. Make a roux with 2 Tbsp. flour and 2 Tbsp. oil. Add in roux, vegetables and chicken to warm chicken broth. Add in other seasonings and cook slowly for about 2 to 2 1/2 hrs. Before serving, add in fresh onion tops and parsley. Serves 6.
