Ingredientes

  • 30 x corn Tortillas, quartered
  • 4 x chicken Breast, skins removed and diced
  • 4 Tbsp. extra virgin olive oil
  • 1 lrg white Onion,diced
  • 1/2 lrg red Bell pepper, diced
  • 1/2 lrg yellow Bell pepper, diced
  • 1 c. Jalapeno Jack cheese, grated
  • 1 1/2 Tbsp. chile Pwdr
  • 1 tsp garlic Salt
  • 1 can Cream of Mushroom soup
  • 1 can Cream of Chicken soup
  • 1 can Rotel Tomatoes

Direcciones

  1. Saute/fry chicken till done in oil.
  2. Add in onions, bell pepper, and garlic salt; cook till vegetables are soft.
  3. Add in tomatoes, soups, chili pwdr and salt to taste.
  4. Simmer for 10 min.
  5. Layer tortillas, mix and cheese into a 10 X 14 casserole pan.
  6. Cook at 350F for 15 min.
  7. More Jalapeno Jack cheese can be added to the top when served.
  8. Garnish with a couple of sprigs of parsley.
