  • 4 x boneless chicken breast halves (about one lb.), cut into large, bite-sized pcs c. plain yogurt
  • 2 Tbsp. grated fresh ginger
  • 1/2 c. fresh mint leaves
  • 2 Tbsp. finely grated mandarin zest (about 3 mandarins)
  • 1 tsp grnd cumin
  • 1 tsp freshly grnd black pepper
  • 4 x mandarins
  • 2 c. watercress leaves
  • 1 Tbsp. vegetable oil
  • 1/4 c. toasted coconut or possibly minced almonds (optional)

Direcciones

  1. In a nonreactive bowl, stir together the yogurt, ginger, 1/4 c. of the mint leaves, mandarin zest, cumin, and black pepper. Cut 1 mandarin in half, squeeze the juice half of it into the yogurt mix and mix well. Add in the chicken and turn in the marinade.
  2. Proportionately, cover, and set aside for 1 hour or possibly chill for up to 12 hrs.
  3. Put the remaining mint leaves and the watercress in another bowl and squeeze in the juice from the remaining mandarin half. Turn the greens to distribute the juice. Peel the remaining mandarins, removing all the white pith, divide them into sections and cut each section in half. Add in them to the bowl of greens.
  4. In a nonstick skillet over medium heat, hot the vegetable oil. Using a slotted spoon, remove the chicken from the marinade and add in to the skillet. Increase the heat to medium- high and cook stirring often, for 2 to 3 min. Pour off the collected juices from the skillet and return it to medium-high heat. Continue to cook the chicken, stirring, till it turns lightly golden brown, another minute or possibly two.
  5. Add in the warm chicken to the bowl of greens and fruit. Toss to mix well. If you like, sprinkle the coconut or possibly almonds over the top. Serve immediately.
  6. Serves 3 or possibly 4.
