Ingredientes
- 2 skinless, boneless chicken breasts, cut in half
- Flour for dredging
- 3 tbsp. extra virgin olive oil
- 2 lg. tomatoes, minced
- 2 teaspoon basil
- 2 teaspoon red wine vinegar
- 1 teaspoon garlic pwdr
- 1/2 c. shredded Monterey Jack or possibly Mozzarella cheese
Direcciones
- Heat oil in skillet. Flour both sides of chicken. Fry chicken 3 min on each side. Meanwhile, mix all ingredients except cheese. Heap tomato mix on chicken, cover with cheese. Put lid on skillet, cook 1-2 more min. 4 servings.
