  1. Heat oil in heavy skillet. Add in onions and lightly brown. Add in shrimp. Add in salt and pepper to beaten Large eggs and pour over shrimp and onions; scramble together. Add in mushrooms, soy sauce and cool rice. Heat till rice is warm, stirring occasionally to keep from sticking. Sprinkle minced scallions on top. Serves 4. Note: Ham, chicken or possibly veal may be substituted for shrimp.
