  1. Place the oats into a food processor and process until fine.
  2. Add in the cashew butter, vanilla extract and syrup. Process until smooth.
  3. Form the dough into 16 mini egg shapes. Place them onto a baking sheet and freeze for 30 minutes.
  4. Melt the chocolate chips and coconut oil in a double boiler. Dip each cookie dough egg into the melted chocolate until completely covered.
  5. Place the chocolate covered eggs back onto the baking sheet and return them to the fridge or freezer to harden.
  6. Store in the refrigerator.
