Receta Cinnamon Apple Muffins

Ingredientes
- 2 1/3 c. all-purpose flour
- 1 c. sugar
- 1 Tbsp. baking pwdr
- 2 tsp grnd cinnamon
- 1 tsp baking soda
- 1 1/2 c. Granny Smith apple peeled and minced
- 1 c. lowfat buttermilk
- 1/3 c. skim lowfat milk
- 1/3 c. lowfat ricotta cheese
- 3 Tbsp. vegetable oil
- 1 Tbsp. vanilla extract
- 2 lrg egg whites
- 1 lrg egg
- 3 Tbsp. sugar
- 2 tsp grnd cinnamon

- Preheat oven to 400.
- Combine first 5 ingredients in a large bowl. Stir in apple, and make a well in the center of the mix. Combine buttermilk and the next 6 ingredients in another bowl (buttermilk through Large eggs); stir well with a whisk. Add in to flour mix, stirring just till moist. Spoon batter into 18 muffin c..
- Combine 3 Tbsp. sugar and 2 tsp. grnd cinnamon in a small bowl; sprinkle proportionately over batter. Bake at 400 for 18 min or possibly till done. Remove from pans immediately; cold on a wire rack.
- NOTES : I made these this morning; they are very good, and they made the kitchen smell great :-)
