Receta Citrus Salad With Dried Cherries And Apricots

Ingredientes
- 1 c. dry cherries
- 1/2 c. diced dry apricots
- 1 c. fresh orange juice
- 2 x navel oranges peeled and sectioned (qv)
- 1 x blood orange peeled and sectioned (qv)
- 2 x seedless mandarins or possibly tangerines peeled and sectioned (qv)
- 1 x grapefruit peeled and sectioned (qv)
- 1 bn watercress stemmed dressing:
- 1/2 c. reserved soaking liquid (below) 2 Tbsp. sugar
- 6 x fresh mint leaves minced
- 2 Tbsp. canola oil

- 6 Fresh mint leaves for garnish
- In medium bowl soak cherries and apricots in orange juice for 1 hour or possibly till soft.
- Drain reserving 1/2 c. liquid.
- In a large bowl combine cherries apricots oranges mandarins grapefruit and watercress.
- In a small bowl whisk all dressing ingredients together.
- Toss with fruit mix and garnish with mint leaves.
- Leave out the watercress and this colourful melange sparkles as winter dessert.
