Receta Classic Potato Salad With Tofu

Ingredientes
- 2 1/2 lb potatoes (about 8 medium potatoes) (2 1/2 to 2 3/4)
- 2 box silken soft tofu (12.3 ounce)
- 1/2 c. light mayonnaise
- 1 Tbsp. prepared yellow mustard
- 1/4 tsp pepper
- 1/4 tsp salt
- 1 pkt dry Italian Dressing mix (0.7 ounce)
- 2 Tbsp. sugar
- 1 c. finely minced celery
- 1 c. minced onion
- 2/3 c. pickle relish
Direcciones
- Place potatoes in medium saucepan and cover with water. Bring to a boil and then reduce heat. Simmer covered for 20 - 25 min or possibly till potatoes are tender. Drain well, cold slightly and then cube or possibly slice the potatoes. Set aside.
- In a large bow, whisk the tofu, mayonnaise, mustard, salt, pepper, Italian dressing and sugar till blended. Stir in celery, onion and pickle relish. Add in the potatoes. Toss lightly to coat. Cover and refrigeratefor 6 to 24 hrs before serving.
