Receta Clementine's Chocolate Chip Cookies

Ingredientes
- 1/2 c. cake flour
- 3/4 c. all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 c. butter - (1 1/2 sticks)
- 1/2 c. granulated sugar
- 3/4 c. light brown sugar - (packed)
- 1 1/4 tsp vanilla extract
- 2 x Large eggs
- 1 c. bittersweet pastilles see * Note

- * Note: Pastilles are round chocolate disks. You can substitute 1 c. of coarsely minced bittersweet chocolate.
- Mix together the cake and all-purpose flours, baking soda and salt in a bowl.
- Cream the butter and sugars with an electric mixer just till the butter chunks disappear. Beat in the vanilla and Large eggs, one at a time. Fold in the flour mix. Stir in the pastilles.
- Cover with plastic wrap and chill till very cool, 1 hour or possibly overnight.
- Heat the oven to 350 degrees (convection oven) or possibly to 375 degrees (standard oven). Line a baking sheet with parchment paper. Roll chunks of batter between your hands into balls about the size of golf balls; place on the baking sheet. Bake till the cookies are done in the center and crispy around the edges, 11 min. Remove to wire racks.
