Receta Coach's Favorite Baby Lima Beans
I have a dog park buddy (former basketball coach) I cook for, and he brought me this recipe a lady in his school cafeteria gave him before retirement. If you can't find dried baby lima beans, use canned or frozen.
This is a real southern comfort food dish, which you will see when you read the ingredients.
Ingredientes
- 1 lb dried baby limas, soaked according to package directions, or use canned or frozen
- 1 finely chopped green bell pepper
- 1 medium onion, finely chopped
- 1/2 lb. bacon
- 1 can Campbell's Tomato Soup
- 1 cup light brown sugar
- 2 tsp. dry mustard
- 2 tbs. oil
Direcciones
- Soak the beans, cook, or use canned or cook frozen ones according to package directions. Drain.
- Heat oven to 350 F.
- Cook the bacon, remove and chop when cooled.
- Saute the veggies in the bacon fat, adding more oil, if needed.
- Comnbine everything in a 9x11 pan.
- Bake uncovered for 45 minutes - 1 hr.
