- softened butter for buttering a 9 x 13-inch baking dish
- 6 large eggs, separated
- 1 cup sugar
- 1 cup all-purpose flour, sifted
- 1 teaspoon vanilla
- 1/2 cup sweetened condensed milk
- 1 can (13.5 oz.) coconut milk (**You can use cream of coconut, see below)
- 1 cup evaporated milk
- 1/2 teaspoon vanilla
- 3 cups heavy cream, whipped, for frosting cake
- flaked coconut for sprinking on top of cake, optional

%20%20After%20my%20younger%20but%20older%20looking%20sister%20and%20I%20talked%20about%20the%20different%20recipes,%20I%20decided%20to%20try%20my%20hand%20at%20my%20own%20version...I%20like%20Tres%20Leches%20Cake%20made%20the%20traditional%20way%20but%20sometimes%20it%20can%20be%20a%20bit%20bland%20-%20and%20the%20milky%20taste%20just%20doesn't%20do%20it%20for%20me.%20%20I%20wanted%20more%20flavor%20so%20I%20replaced%20one%20of%20the%20milks%20with%20coconut%20milk...you%20might%20say%20it%20was%20a%20stroke%20of%20genius%20because%20this%20cake%20is%20now%20my%20new%20favorite!%3C/p%3E%3Cp%3EDoesn't%20look%20like%20much,%20does%20it?%20%20When%20you%20pour%20the%20milks%20on%20top%20of%20the%20cake%20you'll%20think%20it's%20going%20to%20be%20a%20soggy%20mess...but%20it%20turns%20from%20an%20ordinary%20sponge%20cake%20into%20a%20rich,%20moist,%20creamy%20cake%20that%20just%20melts%20on%20your%20tongue...the%20pic%20on%20the%20left%20below%20shows%20the%20cake%20right%20after%20the%20milks%20are%20poured%20on...the%20pic%20on%20the%20right%20shows%20the%20cake%20after%20four%20hours%20of%20refrigeration%20-%20all%20of%20the%20milk%20as%20been%20absorbed%20and%20it's%20ready%20to%20be%20topped%20with%20whipped%20cream...try%20this%20one%20folks,%20it's%20a%205-danger!%3C/p%3E%3Cp%3E**If%20using%20Cream%20of%20Coconut,%20increase%20evaporated%20milk%20to%201%201/4%20cups%20and%20add%201%20cup%20of%20Cream%20of%20Coconut.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees.%20Butter%20a%209-by-13-inch%20baking%20dish.%20In%20a%20mixing%20bowl,%20beat%20egg%20yolks%20and%20sugar%20on%20high%20speed%20until%20light%20in%20color,%20about%205%20minutes.%20%20In%20another%20bowl,%20beat%20egg%20whites%20to%20soft%20peaks.%20Using%20a%20rubber%20spatula,%20fold%20whites%20into%20yolks%20until%20almost%20combined.%20Sprinkle%20sifted%20flour%20(put%20flour%20into%20a%20tight-weave%20strainer%20and%20shake%20over%20the%20mixture)%20over%20top%20of%20egg%20mixture%20and%20gently%20fold%20in%20just%20until%20all%20is%20mixed%20and%20there%20are%20no%20streaks%20but%20do%20not%20beat.%20%20Fold%20in%20vanilla.%20%20Pour%20batter%20in%20prepared%20dish%20and%20spread%20evenly.%20%20Bake%20until%20golden%20and%20pulling%20away%20from%20sides%20of%20dish%20slightly,%20about%2020%20to%2025%20minutes.%20Allow%20cake%20to%20cool%20completely.%3C/p%3E%3Cp%3EMeanwhile,%20prepare%20the%20milks:%20%20In%20a%20medium%20bowl,%20whisk%20together%20the%20sweetened%20condensed%20milk,%20the%20coconut%20milk%20(or%20coconut%20cream,%20if%20using,%20and%20the%20additional%20evaporated%20milk)%20and%20the%20evaporated%20milk.%20%20Whisk%20in%20vanilla.%20When%20cake%20is%20completely%20cooled,%20poke%20holes%20in%20the%20top%20of%20cake%20with%20a%20wooden%20skewer%20(a%20chopstick%20works%20great).%20%20Pour%20milks%20evenly%20over%20cake.%20%20Cover%20with%20plastic%20wrap%20and%20refrigerate%20for%20four%20hours%20or%20refrigerate%20overnight.%20%20Frost%20cake%20with%20whipped%20cream.%20%20Sprinkle%20flaked%20coconut%20on%20top.%20%20(For%20even%20more%20flavor,%20as%20if%20that's%20possible,%20toast%20the%20coconut!)%3C/p%3E%3Cp%3EWhen%20ready%20to%20serve,%20cut%20into%20squares.%20%20Serves%2012%20to%2016,%20depending%20on%20how%20big%20you%20cut%20the%20portions.%3C/p%3E%3Cp%3EI've%20made%20this%20cake%20TWICE%20in%20the%20last%20two%20days...TWICE!%20%20We%20just%20couldn't%20get%20enough%20of%20it!%20%20If%20I%20keep%20up%20this%20pace%20I'm%20going%20to%20have%20to%20fly%20home%20in%20a%20JUMBO%20jet%20because%20I%20won't%20fit%20in%20a%20little%20737!%3C/p%3E){kind=link}
