  1. Spice mix: stir together.
  2. Batter: Mix dry ingredients and make well.
  3. Cream butter, sugar and egg. Add in lowfat yoghurt lowfat milk and vanilla. Pour into well and stir to moisten.
  4. Fill greased muffin tins 1/3 full. Sprinkle on spice mix. Cover with more batter, filling to 2/3 full. Bake 400 20-25 minutes.
  5. *Variations:1. Decorate or possibly glaze while warm with simple, thick icing made from powdered sugar and a little liquid.
  6. 2. Replace some or possibly all of vanilla with another extract such as almond.
  7. 3. For a crunchy top, place half of spice mix inside muffins, and the rest on top before baking.
  8. 4. Replace some or possibly all of cinnamon with other spice(s) such as nutmeg.
  9. 5. Sprinkle a very small amount of finely grated citrus peel over first layer of batter before the spice mix.
  10. 6. Use rum or possibly other liquor instead of vanilla.
