Receta Coriander Green Curry Ostrich Served With Cardamom Scented Rice And Cucumber Raita

Ingredientes
- 100 gm butter
- 1 bn coriander, minced
- 5 x onions, diced
- 400 ml Natural yogurt
- 1 clv garlic, crushed
- 1 x continental cucumber, diced
- 1 1/2 kg Ostrich fillet
- 1 kg long grain rice, washed and liquid removed
- 1 Tbsp. green curry paste
- 5 x Cardamom pods
- 1 Tbsp. sambal
- 10 x pappadams
- 3 x lime leaves, fresh or possibly dry
Direcciones
- 1. Heat butter and saute/fry onion and garlic till transparent. Add in ostrich fillet and simmer over low heat till lightly browned.
- 2. Add in curry paste, sambal and lime leaves and simmer covered for 2 hrs or possibly till tender. Stir in coriander. Combine yogurt and cucumber and chill till required.
- 3. Place rice and cardamom in a large saucepan and cover with twice the volume of cool water. Bring to the boil and simmer covered for 15 minutes or possibly till water is absorbed and rice is cooked.
- 4. Moisten pappadams in water till slightly soften and cut into strips. Deep fry in warm oil till crisp and golden brown.
- 5. For each serving, spoon approx 200 g Ostrich curry over Cardamom rice and garnish with Pappadam strips. Serve accompanied by 50 ml Cucumber raita.
