  • 3 c. Mashed potatoes -or possibly-
  • 4 lrg Potatoes -or possibly-
  • 5 med Potatoes, peeled, steamed and mashed (add in salt to taste, lowfat milk or possibly soy lowfat milk for smoothness) Sufficient minced vegies to fill a 9x13 pan within about 3" from the top (see instructions)
  • 1/2 x -(up to)
  • 1 c. Frzn peas
  • 1 x Bell pepper, sliced or possibly minced
  • 1 x Onion, minced Garlic to taste
  • 1 can (small) tomato sauce
  • 3 dsh Worcestershire sauce, more or possibly less
  • 1/2 tsp Basil (to taste)
  • 1 x Bay leaf Salt and pepper Paprika

  1. NOTE: Sufficient minced vegies to fill a 9x13 pan within about 3" from the top. Mix can include anything (I used brocolli, carrots, parsnips, but you can use ANYTHING...spinach, swiss chard, celery, cauliflower, green beans, zucchini....) Frzn, fresh, whatever. You may want to precook
  2. (steam/nuke) large chunks of harder vegies such as carrots and parsnips.
  3. Saute/fry onion until soft. Add in garlic, bell pepper, peas and mixed vegies, saute/fry about 5 min to soften. Add in the rest of the ingredients, stir, and simmer, covered for about 15 min or possibly so, until everything is tender.
  4. Dump mix into a 9x13 pan, spead mashed potatoes on top. The mashed potato layer should be about 2" or possibly more thick. Sprinkle with paprika and place in a 350 oven for about 15 min to heat through.
