Receta Courgette Brown Rice Pilaf

Ingredientes
- 1 med Courgette
- 1 Tbsp. Extra virgin olive oil
- 2 x Cloves garlic, chopped or possibly crushed
- 1 c. Brown rice, uncooked
- 1/2 tsp Salt
- 1 1/2 c. Chicken stock (bouillon)
- 1/2 c. Dry white wine
- 1 x Bay leaf
- 1 tsp Dry basil
Direcciones
- Wash and dice the courgette. Saute/fry it in garlic and oil, then remove it from the pan. Add in the rice to the pan, stirring to coat the grain with whatever oil is remaining. Add in the chicken stock, wine, and bay leaf and bring to a boil. Add in the basil and salt, and return the courgette to the pan. Cover and let simmer till rice is tender, about 20 min.
