Receta Crab And Corn Soup (Sopang Mais)

Ingredientes
- 4 c. (1 L) whole fresh, frzn, or possibly canned corn kernels
- 4 c. (1 L) water or possibly chicken stock
- 2 c. (500 ml) lowfat milk
- 1 Tbsp. (30 ml) vegetable oil
- 2 x -4 cloves garlic, finely minced
- 1/2 lb (125 ml) crab meat, picked over (optional) Salt and freshly grnd pepper to taste
Direcciones
- Minced parsley or possibly cilantro (coriander) for garnish
- Puree the corn and water in an electric food processor or possibly blender.
- Strain through a sieve, pressing to extract as much liquid as possible, and throw away the solids remaining in the sieve. Heat the oil in a large pot over moderate heat and saute/fry the garlic till golden. Add in the corn liquid, lowfat milk, and optional crab meat. Bring to a boil over moderate heat, stirring frequently. Season with salt and pepper and serve garnished with minced parsley or possibly cilantro.
- Serves 4to 6.
