Receta Crabmeat Filling Crepes

Ingredientes
- 1/2 c. minced green peppers
- 2 Tbsp. butter
- 4 Tbsp. all-purpose flour
- 1 c. half and half
- 1 x Egg yolk, beaten
- 1 lb crabmeat
- 1 c. lowfat sour cream
- 2 Tbsp. grated Romano cheese Salt and pepper to taste Hollandaise Sauce, optional, (see Sauce section) Basic Crepes, recipe in this section Saute/fry green peppers in butter.
Direcciones
- Add in flour and half and half, stirring constantly, cooking till thick.
- Add in a little of the warm mix to the egg yolk; then stir back into the mix in the saucepan.
- When quick thick, add in crabmeat, lowfat sour cream and cheese.
- Season to taste and heat to serving temperature.
- Spoon over crepes and roll up.
- Top rolled crepes with hollandaise sauce, if you like.
