Receta Cracked Wheat Salad With Grilled Red Onion

Ingredientes
- 1 lb Bulgur
- 1 lrg Red onion sliced 1/4" slices
- 3 Tbsp. Extra virgin olive oil divided
- 3 x Plum tomatoes diced
- 1 c. Finely-minced flat-leaf parsley
- 2 Tbsp. Finely-minced mint
- 1/4 c. Fresh lemon juice Salt to taste Freshly-grnd black pepper to taste
Direcciones
- Preheat the grill. Place the bulgur in a large bowl and cover with boiling water, let stand 15 min and drain.
- Brush the onion slices on both sides with the extra virgin olive oil and season with salt and pepper to taste. Grill on both sides till almost cooked through, remove and coarsely chop.
- Place the bulgur in a large bowl, add in the remaining ingredients and mix to combine. Season with salt and pepper to taste. Serve at room temperature.
- This recipe yields 4 servings.
