- 1 1/3 c. plus 1 1/2 c. sugar
- 4 c. fresh cranberries
- 5 egg yolks
- 3/4 c. water
- 1/2 c. oil
- 2 teaspoon vanilla
- 2 teaspoon grated lemon rind
- 2 c. flour
- 1 1/4 teaspoon baking pwdr
- 1 T salt
- 7 egg whites
- 1/2 teaspoon cream of tartar

- Grease two 8-inch square pans. Sprinkle each with 1/3 cup sugar. Place 2 cups cranberries in each. Sprinkle another 1/3 cup sugar over each and cover with foil. Bake in a preheated 325 degree oven for 30 min. Remove, uncover, and cool.Mix the egg yolks with remaining 1 1/2 cup sugar. Beat in water, oil, vanilla, and lemon rind. Mix well. Put together flour with baking pwdr and salt. Add in to egg yolk mix and beat till smooth. Beat whites with cream of tartar till soft peaks form. Fold into batter. Spoon batter into pans and bake in a preheated 350 degree oven for 35 to 40 min (or possibly 25 to 30 min at 300 degrees in convection oven). Cool 5 min, invert, and stack one on top of the other.
