Receta Cream of Wild Mushroom Soup
Ingredientes
- 1 small handful assorted dried wild mushrooms
- 1 1/2 cups hot water
- 8 T (1 stick) butter, 2 T of which at room temperature
- 1 cup finely chopped celery
- 1 cup sliced shallots
- 3/4 cup chopped onion
- 4 garlic cloves, minced
- 3 cups sliced stemmed fresh shiitake mushrooms (about 6 oz)
- 3 cups sliced crimini mushrooms (about 6 oz)
- 3 cups sliced oyster mushrooms (about 4 1/2 oz)
- 2 T chopped fresh thyme
- 1/2 cup white wine
- 1/2 cup dry Sherry
- 1/4 cup all purpose flour
- 8 cups chicken stock or canned low-salt chicken broth
- 1/4 cup whipping cream (plus more to taste)
- salt to taste throughout recipe
- For garnish: handful of wild mushrooms and 2 T butter
