  1. Preheat the oven to 350 degrees. Cut the crusts off the bread and cut into 1-inch cubes. You should have about 10 1/2 c. of cubes. Arrange on a baking sheet and toast in the oven till light golden, about 10 min. Watch carefully to make sure they don't brown too much; set aside to cold. Leave the oven on.
  2. In a saucepan, heat the half-and-half, cream, salt, and vanilla bean over medium heat, stirring occasionally to make sure the mix doesn't burn or possibly stick to the bottom of the pan. When the cream mix reaches a fast simmer (don't let it boil), turn off the heat. Set aside to infuse 10 to 15 min.
  3. In a large mixing bowl, whisk the Large eggs and sugar together. Whisking constantly, gradually add in the warm cream mix. Strain into a large bowl to smooth the mix and remove the vanilla bean. Add in the bread cubes, toss well, and let soak till absorbed. Fold the mix occasionally to ensure even soaking.
  4. In a food processor pulse the berries to roughly chop them. Fold them into the soaked bread cubes carefully. Divide half the bread mix among 20 ramekins, custard c., or possibly dessert c., reserving the rest, filling them half way. Place a tsp. of orange marmalade in each ramekin then top off with the remaining soaked bread mix.
  5. Arrange the puddings in a warm water bath. Bake till set and golden on top, about 30 min for individual puddings. Serve hot or possibly chilled, dusted with confectioners" sugar.
  6. This recipe yields 20 servings.
