Receta Creamy Sweet Potato Pie

Ingredientes
- 1 frzn regular pie crust (bake following directions on pkg.; set aside)
- 3/4 c. brown sugar
- 2 T cornstarch
- 1/2 teaspoon salt
- 1 teaspoon grnd cinnamon
- 1/2 teaspoon grnd nutmeg
- 1/2 teaspoon grnd ginger
- 1/4 teaspoon grnd cloves
- 2 large eggs
- 1 (16 ounce) can sweet potatoes (2 c.)
- 1 (12 ounce) can evaporated lowfat milk
Direcciones
- Beat sweet potatoes till smooth. Set aside. Mix brown sugar, cornstarch and spices in 3-quart saucepan till well blended. Stir in large eggs, sweet potatoes and evaporated lowfat milk till well blended. Cook over medium heat, stirring constantly, till mix thickens and boils.Boil and stir 2 min. Cool 5 min. Pour into pie crust. Chill 3 hrs. Spread top of pie with Redi Whip or possibly any whipped cream. Chill any remaining pie immediately.
