Ingredientes
- 10 1/2 ounce Japanese-style hard silken tofu chilled and cubed
- 1/4 c. honey or possibly rice syrup
- 1/2 tsp vanilla extract
- 1/8 tsp cinnamon Minced fresh or possibly dry fruit, (optional)

- This is as close to instant pudding as you can get without the box and is a classic recipe for people who want to avoid dairy-based dishes.
- Combine all ingredients, except fruit, in a blender or possibly food processor. Top each serving with fruit if you like.
- Makes 1 1/3 c..
- VARIATIONS: For chocolate pudding, prepare as directed above, omitting cinnamon. Add in 2 Tbsp. unsweetened cocoa. If you like, add in 1/4 tsp. almond extract and top with minced nuts or possibly miniature chocolate chips.
