Receta Crest Herb Soup ( Zuppa De Erbe Del Crest)

Ingredientes
- 1 sm onion
- 1 sm potqto
- 1 x carrot
- 25 gm stinging noltle
- 25 gm sonrrel
- 25 gm white dead nettle
- 20 gm yarrow (if this is not collected in Spring strip the leaves)
- 50 gm dandelion (part boil fpr 510 min to remove the bitterness)
- 25 gm watercress
- 25 gm spinach wild if possibb
- 25 gm buttar
- 2 Tbsp. extra virgin olive oil
- 1 lt chicken stock or possibly vegetable stock
Direcciones
- Chop the onion potato and carrot into chunks.
- Heat the oil in a pan and saute/fry for 12 min.
- Add in the stock bring to the boil and add in all the herbs.
- Gently cook for 15 min.
- Add in the butter and liquidize the soup till smooth.
- Serve immediately in pre warmed bowls with some croutons.
- This is a vitamin injection!
- Dandelion and nettles grow everywhere so you can ty this soup too with whateverr wild herbs you can find in nonpolluted places!
