  1. Peel and slice onions about 1/3 inch thick; separate into rings. Pour buttermilk into large shallow pan. Add in onion rings and let soak for 30 min. Combine remaining ingredients, except oil for frying, in a bowl and stir till smooth. Heat frying oil on medium-high heat. Remove onion rings from buttermilk and dip into batter. Fry in warm oil till golden. Drain rings on paper towels. Makes 6-8 servings.
