Receta Crock Pot Tuscany Peasant Soup

Ingredientes

  • 4 x mild Italian sausages
  • 1 x celery stalk diced
  • 3 med zucchini thinly sliced
  • 1 sm onion diced
  • 3 c. beef stock
  • 1 can tomato sauce - (8 ounce)
  • 2 tsp minced fresh basil (or possibly 1/2 tspn dry basil) Salt to taste Freshly-grnd black pepper to taste Grated Parmesan or possibly Romano

Direcciones

  1. Slice sausages 1/2-inch thick. Using a large saucepan, brown sausages. (If turkey, spray pan first with vegetable spray.) Pour off any fat. Add in celery, zucchini and onion. Saute/fry 2 min, stirring.
  2. Put stock, tomato sauce and basil into crockery pot and mix; add in sausage and vegetable mix; cover and cook on LOW for 3 1/2 to 4 1/2 hrs. Salt and pepper to taste.
  3. Ladle into bowls and garnish with grated cheese. Serve this hearty soup accompanied by garlic-buttered toasted French bread.
  4. Comments: Italian sausages made of turkey meat can be substituted, and make this a perfect low fat meal.
