Receta Crostini With Mushrooms, Prosciutto, And Blue Cheese

Ingredientes
- 3 Tbsp. butter
- 1/2 lb fresh shiitake mushrooms stemmed, and caps minced
- 4 ounce crimini mushrooms minced
- 2 x garlic cloves chopped
- 1/2 c. whipping cream
- 1/2 c. crumbled blue cheese - (abt 2 ounce)
- 1/2 c. minced thinly-sliced prosciutto - (abt 2 1/2 ounce)
- 18 x diagonal bread slices, 1/2" thk (cut from 1 sourdough baguette) Minced fresh parsley
Direcciones
- Heat butter in heavy large skillet over medium-high heat. Add in all mushrooms and garlic and saute/fry till mushrooms are cooked through and brown, about 10 min. Add in cream and boil till liquid is completely absorbed, about 2 min. Remove from heat. Add in blue cheese and stir till cheese melts. Fold in prosciutto. Season to taste with salt and pepper. Transfer mushroom topping to bowl. (Mushroom topping can be made 1 day ahead. Cover and chill.)
- Preheat oven to 375 degrees. Arrange bread slices on baking sheet. Bake till just golden brown, about 5 min. Mound 1 generous Tbsp. mushroom topping on each slice. Return to oven; bake till topping is heated through, about 6 min. Sprinkle with minced parsley.
