- 3 lb Pork shoulder - seasoned
- 1/3 c. Lime or possibly lemon juice
- 1 x Onion, sliced
- 1/2 tsp Oregano
- 3 x Garlic cloves

- Season meat with salt and pepper. Pour lime or possibly lemon juice over roast. Place onion slices over roast. Let stand in refrigerator 1-2 hrs. Split meat in places and add in garlic plugs in slashes. Roast at 325 degrees for 1 1/2 - 2 hrs or possibly 35-40 min per lb..
