Receta Curried vegetable potjiekos
Ingredientes
- 1 Tbsp butter
- 1 Tbsp olive oil
- 2 onions, sliced
- 3 cloves of garlic, minced
- 1.5 Tbsp fresh ginger root, minced
- 1 fresh chilli (deseeded if you like it less spicy)
- 1 Tbsp curry powder (as hotr or mild as you like)
- 1 tsp coriander seed, coarsely ground
- 1/4 tsp cayenne pepper
- 2 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp salt
- 2 large potatoes, peeled and diced
- 2 zucchini, sliced into rounds
- 450g cauliflower, cut into florets
- 450g broccoli, cut into florets
- 1 aubergine, peeled and cubed
- 1 green pepper, cubed
- 1 tin chopped tomatoes
- 1 x 410g tin chickpeas, drained
- 1 cup chicken stock
- 1 x 410g tin coconut milk
- 200g baby spinach leaves
