Receta Dairyland Confetti Chicken

Ingredientes
- 1 c. Sliced carrots
- 3/4 c. Minced onion
- 1/2 c. Sliced celery
- 1/4 c. Chicken broth
- 1 can Cream of chicken soup
- 1 c. Lowfat sour cream
- 3 c. Cubed cooked chicken
- 1/2 c. Sliced mushrooms (I always use fresh)
- 1 tsp Worcestershire sauce
- 1 tsp Salt
- 1/8 tsp Pepper
- 1 c. All purpose flour
- 2 tsp Baking pwdr
- 1/2 tsp Salt
- 2 x Large eggs, slightly beaten
- 1/2 c. Lowfat milk
- 1 Tbsp. Minced green pepper
- 1 Tbsp. Minced pimiento
- 1 1/4 c. Shredded cheddar

- For casserole: In saucepan, combine carrots, onion, celery and chicken broth. Simmer 20 min. In 3 qt casserole dish, mix soup, lowfat sour cream, chicken, mushrooms, worceterchire, salt & pepper. Add in simmered veggies WITH liquid. Mix well.
- For topping: In mixing bowl, combine flour, baking pwdr and salt. Add in Large eggs, lowfat milk, green pepper, pimiento and 1 c. of the cheese. Mix just till well blended. Drop Tbsp. of this mix onto casserole and then bake in 350 oven for 40-45 min or possibly till golden. (don't overcook this part) Sprinkle with remaining 1/4 c. of cheese and return to oven till melted.
- I have made this several times. So yummy. It's great the next day after everything has mingled together. BTW, I do not do the last sprinkle cheese part. I add in all the cheese at one time.Yes, I did have to type all this but you guys are worth it. Enjoy -
