- 3 c. Cooked white and wild rice Mix
- 1 med Tart green apple, cored And minced
- 1 c. Cooked ham, diced
- 1 c. Sliced celery
- 2/3 c. Minced dates
- 1/2 c. Red onion, finely minced
- 1/2 c. Extra virgin olive oil, extra light
- 1/4 c. Fresh orange juice
- 1/4 c. Red wine vinegar Salt and pepper, to taste

- Dice 4 ounces of cooked ham to make about 1 c..
- Dressing: Whisk together all the ingredients untill well combined.
- Salad: Combine all ingredients for the salad and toss to mix. Add in the dressing and toss to coat. Refrigerate2 to 3 hours. before serving.
