Receta DELICIOUS LEMON CHICKEN SOUP
This is a delicious chicken soup! I used a rotisserie chicken to make it super simple and quick. Perfect for a weeknight dinner. I served it with a crusty Rosemay Bread.

Ingredientes
- LEMON CHICKEN SOUP
- 3 Quarts of chicken broth ( 12 cups)
- 5 cups of chicken cooked ( I used a rotisserie chicken)
- 1 cup of brown rice
- 2 large carrots diced small
- 2 celery stalks diced small
- 1 small onion diced small
- 1 Tbs. olive oil
- 1 Tbs. Butter
- 3 lemons Juiced
- 1/2 lemon zest
- 1 pkg of baby spinach ( I would chop this slightly)
- black pepper to taste
Direcciones
- In a large pot heat oil and butter, add onion, celery and diced carrots. Saute for about 10 minutes stirring constantly. Pour in chicken broth. Heat to a boil and add the rice. After about 5 minutes turn heat to med high. Add lemon zest and juice. Continue cooking for about 20 minutes until rices seems to become tender. Add chicken and chopped spinach and simmer for 10 minutes.
