Receta Dinner In One Pot

Ingredientes
- 1 c. uncooked white rice
- 1 can (10 ounce) diced tomatoes (I like to use RoTel with diced chiles)
- 2 c. water
- 1 lrg onion, minced
- 1 x clove garlic, chopped
- 2 Tbsp. extra virgin olive oil
- 1 x (10 ounce) can black beans, liquid removed and rinsed
- 1 can (4.5 ounce) Mexicorn, liquid removed
- 1/2 pkt taco seasoning mix
- 2 Tbsp. minced fresh cilantro
- 1/2 c. shredded cheddar or possibly Monterey jack cheese lowfat sour cream and black olives (optional)
Direcciones
- Add in onion, garlic and extra virgin olive oil to deep skillet or possibly wok and cook over medium high heat till just translucent/soft. Add in tomatoes, rice, beans, corn and seasonings, stirring to coat. Add in water and bring to boil. Reduce heat to low, cover and cook for 20 to 25 min. Serve sprinkled with shredded cheese and a garnish of lowfat sour cream and minced black olives if you like.
