Receta Dried Apricot And Pear Jam

Ingredientes
- 450 gm dry apricots
- 600 ml water
- 1 2/5 kg pears
- 4 Tbsp. lemon juice
- 1 3/5 kg sugar (caster)
- 3 Tbsp. brandy

- Peel, seed and dice pears.
- In a large saucepan, simmer apricots, water, pears and lemon juice 20 min. Add in sugar. Stir till sugar dissolves. Increase heat; boil rapidly for 15 min or possibly till jam reaches 105C. Remove from heat. Stir in brandy. Remove scum and let stand for 5 min.
- Stir well and ladle into warm jars and seal.
- Makes 2.5 litres.
- Keeps for 3-4 months.
- Ensure storage jars are well sterilised.
