Receta Dried Beans (Blackeyed Peas, Pinto, Navy, Etc.)

Ingredientes
- 2 c. dry beans, Blackeyed Peas, Pinto, Navy, etc.
- 1 onion, minced
- 1 clove garlic, pressed
- 1/2 pound salt pork, sliced thick or possibly smoked ham hocks
- 1/4 teaspoon dry red pepper
- 1 stalk celery, minced
- Water
- 1 teaspoon salt
Direcciones
- Pick and wash beans under running water. Put beans in 2 qt pot, cover with water, add in salt and boil about 15 min. Let stand till cold, drain, rinse and set aside. Put the remaining ingredients in a 4 qt pot, cover with water, bring to a boil and let simmer for 1 hour. Add in the beans and cook another 2 hrs.
- Excellent with Cole Slaw and Corn Bread.
