Receta Duck Gumbo

Ingredientes
- 2 ducks (or possibly geese)
- 2 quart. water
- 1/2 c. butter
- 1/3 c. flour
- 2 onions
- 3 stalks celery
- 1 bell pepper
- 2 cloves garlic
- Green onions
- 1 can tomato sauce
- 1 can tomatoes
- 1 teaspoon parsley
- 1/2 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon each black & red pepper
- 1 pkg. frzn okra
- 1 teaspoon file gumbo
- 2 quart. duck broth
Direcciones
- Boil duck in water till tender. Cold and remove from bones. Heat butter. Add in flour and brown. Add in all vegetables. Add in tomato sauce and tomatoes. Add in duck broth, okra and seasonings. Add in cooked duck meat cut into small pcs. Cook about 1 hour. Add in file if desired. Serve over cooked rice.
