Receta Dumplings With Tomatoes And Zucchini

Ingredientes
- 1/4 c. Minced onion
- 2 Tbsp. Veg. oil
- 4 lrg Tomatoes, peeled and minced
- 1 Tbsp. Chopped fresh basil -Or possibly-
- 1 tsp Dry basil
- 1 tsp Sugar
- 1 tsp Salt
- 1/4 tsp Pepper
- 2 med Zucchini, peeled and cubed
- 1 x Egg, lightly beaten
- 1 c. Grated Parmesan cheese
Direcciones
- In a large skillet, saute/fry onion in oil till tender. Add in tomatoes, basil, sugar, salt and pepper. Simmer, covered, for 20 min. Add in zucchini. Cook, covered, for 15 min or possibly till tender.
- For dumplings, combine egg and cheese. Drop by Tbsp. onto tomato mix. Simmer, covered, for 5 min or possibly till dumplings are hard.
