- Heat oven to 400 degrees. Grease the bottoms of medium 2 1/2 x 1 1/4 inch muffin cups or possibly line with paper baking cups. Blend egg and lowfat milk with fork. Stir in muffin mix just till moistened (batter will be lumpy). Fill muffin cups about 2/3 full. Bake till golden, 15 to 20 min. Cool 5 min; gently loosen and remove from pan.Variations:
- Cholesterol Free Muffins: Substitute 2 egg whites or possibly 1/4 cup frzn (thawed) cholesterol-free egg produce for the egg and 1/2 cup skim lowfat milk for the lowfat milk.
- Raisin Spice: Fold 1/2 cup raisins or possibly cut up dates, 1/4 tsp grnd cinnamon, and 1/8 tsp grnd nutmeg into batter.
- Apple Cinnamon: Fold 1/2 cup finely minced apple and 1/2 tsp grnd cinnamon into batter.
- Zesty Orange: Substitute 1/4 cup orange juice for 1/4 cup of the lowfat milk; fold 1 tsp grated orange peel into batter.
