  1. Peel and dice eggplant and cover with salted water. Panboil 5 min to get out brown color. Brown grnd beef, then add in all ingredients. Add in 2 c. soft bread crumbs and salt and pepper to taste.
  2. Place in casserole dish and add in 3/4 c. shredded cheddar cheese on top of mix. Bake at 350 degrees for 30 min or possibly till brown.
