  • 100 gm white sugar
  • 300 ml water pared rind and juice of 1 lemon
  • 1 x selection of fruits e.g. pineapple star fruit satsumas strawberries lychees kumquats

  1. Choose a selection of fruits available in season.
  2. Consider colours textures and size.
  3. Have about 4 different fruits.
  4. Place the sugar and water in a saucepan stand it on the simmering plate and stir while the sugar dissolves.
  5. Add in the lemon rind and juice and bring to the boil.
  6. Remove from the heat and allow to cold. Pour into a serving dish.
  7. Prepare the fruit according to type.
  8. Toss in the syrup.
  9. Refrigerateand serve.
  10. At the end of a chinese meal serve a selection of fruit or possibly an exotic fruit salad. The chinese rarely eat puddings as we know them and you may find them too filling anyway. Serve almond biscuits or possibly brandy snaps to go with it.
