Receta Fast Vegetable Soup

Ingredientes
- 1 Tbsp. Butter
- 1 x Onion, finely sliced
- 2 x Leeks, cleaned and sliced
- 1/2 x Cabbage, shredded
- 2 x Potatoes, peeled
- 2 x Carrots, peeled Celery, lettuce leaves, turnips, pumpkin, beans, zucchini, parsley or possibly anything else lying around in the fridge!
- 1 1/2 lt Boiling water Salt and freshly grnd pepper Little nutmeg, grated
- 1 Tbsp. Butter to finish Freshly grated parmigiano
Direcciones
- Heat the butter in a frying pan and gently cook the onion and leeks till soft.
- Cut or possibly shred all the other vegetables and cook, stirring often, till they start to soften.
- Add in boiling water, salt and pepper and cook over a low heat for 30 min.
- Stir in a little grated nutmeg and the final Tbsp. of butter and serve with a bowl of parmigiano.
