Receta Favorite Coconut Cake

- 1 box yellow cake mix with pudding (mix as directed) add in 1 can coconut bake as directed in 13 x 9 pan

- When done and still hot, with sharp knife blade, make slits across cake spoon warm sugar mix over cake so entire surface is covered.
- warm sugar mix:boil together for 2 minutes:1 c. sugar1/2 c. water1/4 stick margarine
- Filled Cookies1 c. Sugar1 1/2 Tbsp. Vegetable Shortening3 Eggs1 c. Milk2 tsp. Baking Powder1/2 tsp. Salt1 tsp. Vanilla1 c. Raisins1 c. Chocolate Chips1 c. Nuts - choppedCornstarch - as neededFlour - as needed
- Cream sugar, shortening & Large eggs. Add in lowfat milk, baking pwdr, salt and vanilla and mix well. Add in sufficient flour to make a dough that can be rolled out.
- Roll out dough and cut into 3 inch circles with the lip of a drinking glass or possibly a biscuit cutter.
- Filling:Barely cover raisins and nuts with warm water till they swell. Heat and thicken with cornstarch. Partly cold and add in chocolate chips.
- Drop 1 tsp. of filling onto a dough circle. Cover with second dough circle and seal edges.
- Bake at 375 degrees F on greased cookie sheets for 10 -12 min. Cold and frost/decorate as desired. Store in closed container to keep soft.
