Receta Figue Vert (Green Banana) Gratin

Ingredientes
- 3 lb Green bananas
- 2 c. Chicken Stock
- 2 Tbsp. Butter
- 1 x Small Onion, minced
- 1 c. Light cream or possibly lowfat milk
- 2 x Large eggs, beaten
- 1 x Salt
- 1 x Grnd Nutmeg
- 1 pch Cinnamon
- 1 c. Grated Cheddar Cheese
- 1/2 c. Fresh Bread Crumbs

- Grated Gruyere cheese can be used instead of cheddar cheese. Place bananas in saucepan and add in just sufficient chicken stock to cover. Bring to a boil, reduce heat and simmer till bananas are tender, about 20 to 25 min. Using a potato masher, mash till smooth
- (chicken stock will be absorbed). Let cold slightly.
- Meanwhile, heat butter in a small frypan and saute/fry onions till tender. Add in the onions, cream, beaten Large eggs to cooked bananas till combined; season with salt, nutmeg and cinnamon to taste. Mix will be quite moist.
- Place banana mix in a buttered shallow baking dish. Combine cheese with bread crumbs; sprinkle over top. Bake at 350 for 35 - 40 min or possibly till top is golden brown.
- Serves 4 - 6.
