Receta Five Herb Marinated Chicken With Roasted Garlic Fava Sauce

Ingredientes

  • 1/2 c. extra virgin olive oil
  • 2 Tbsp. coarsely-minced fresh sage
  • 2 Tbsp. coarsely-minced fresh parsley
  • 2 Tbsp. coarsely-minced tarragon
  • 2 Tbsp. minced rosemary
  • 2 Tbsp. minced thyme
  • 6 x garlic cloves coarsely minced
  • 2 whl chickens - (2 1/2 to 3 lbs ea) butterflied Salt to taste Freshly-grnd black pepper to taste
  • 8 c. home-made chicken stock
  • 1 x garlic head roasted, cloves squeezed into a bowl
  • 2 Tbsp. cool butter cut into Tbsp.
  • 1 Tbsp. freshly-squeezed lemon juice Salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. cooked fava beans
  • 1 lb celeriac peeled, and cut into 2" pcs
  • 1 lb baking potatoes peeled, and cut into 2" pcs
  • 3 Tbsp. unsalted butter
  • 1/2 c. lowfat milk or possibly cream warmed Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. For the Chicken: Whisk together the extra virgin olive oil, herbs and garlic in a large shallow baking dish. Add in the chicken and turn to coat. Cover and let marinate at least 4 hrs or possibly overnight.
  2. Preheat oven to 400 degrees. Heat a large saute/fry pan or possibly grill pan over high heat till just smoking. Remove chicken from marinade and season with salt and pepper to taste. Sear each chicken on both sides, and place on a sheet pan. Place in oven and bake for 15 to 20 min, till cooked through.
  3. For the Roasted Garlic-Fava Bean Sauce: Place stock and roasted garlic in a medium saucepan and reduce to 3 c.. Strain into a clean saucepan and bring to a simmer. Whisk in the butter and lemon juice and season with salt and pepper to taste. Add in the fava beans and cook for 1 minute.
  4. For the Celeriac and Potato Puree: Place the celeriac and potatoes in a large saucepan filled with salt water and cook till soft. Drain, rinse out the pan and run the celeriac and potatoes through a food mill into the pan. Add in the butter, warmed lowfat milk and beat with a wooden spoon. When the mix is smooth, season with salt and pepper and mix in the parsley.
