Ingredientes
- 1 piece foie gras
- 3 piece pcs pancetta mesclun, salad mix, tossed with caesar dressing For Onions
- 1 x red onion, thinly, sliced
- 1 Tbsp. dark brown sugar
- 4 Tbsp. soy sauce tbsp salt and pepper, to taste Sweet And Sour Base
- 2 c. sherry vinegar honey
- 2 Tbsp. crushed white peppercorns
- 2 Tbsp. ginger tbsp rosemary, to taste thyme, to taste
- 1 x bay leaf For Ketchup
- 24 x tomato, peeled, seeded
- 2 x onion
- 4 clv garlic
- 3 ounce tomato, paste
- 1 1/2 c. sweet and sour base
Direcciones
- Season foie gras with salt and pepperPan-fry (no oil) for 7 to 10 minutesPat dry with a paper towelToast pancettaTo assemble, toast hamburger bun. Place ketchup in the middle of the plate topped with one half of the bun.
- Layer as follows: onions, pancetta, foie gras, and greens Top with other half of bun. Drizzle green extra virgin olive oil around burger.
- For Onions:Saute/fry onions in oil till brownAdd brown sugar and caramelizeAdd soy sauce and season with salt and pepper.
- Sweet And Sour Base:For the sweet sour base, reduce all ingredients in a saucepan till thick, like ketchup.
- For Ketchup:reduce all ingredients, including sweet and sour base till thick.
