Ingredientes
- 4 lb baking potatoes
- 1/4 c. hot bacon grease divided
- 2 x onions diced
- 1 x red bell pepper diced
- 1 x yellow bell pepper diced
- 1 x green bell pepper diced
Direcciones
- Place the potatoes in a large saucepan and cover with water. Bring them to a boil and cook till tender, about 20 min. Drain the potatoes, then chill overnight, covered.
- The next day, quarter the potatoes, then cut them into 1/2-inch pcs. Set aside.
- Heat 1 Tbsp. of the bacon grease in a large skillet over medium heat and cook the onions and peppers, stirring occasionally, till the onions are soft and translucent/soft, 20 min.
- Toss the potatoes with the remaining 3 Tbsp. of bacon grease, and add in the potatoes to the skillet. Cook, turning once in a while so they do not burn, till the potatoes are a nice brown color and a little crusty, 10 to 15 min.
- This recipe yields 6 servings.
- Do ahead tip: Cook the potatoes the night before, then the day of the party, use leftover bacon grease to finish the recipe.
