I made these today and they were very, very good. My husband does not care for cakes or cupcakes and he said "very good" while eating one! I didn't have almond extract so I used a bit extra of the vanilla extract.
I used fresh strawberries and added the recommended amount of sugar to them after pulsing them in the blender. I thought they were a bit too sweet so I cut the sugar from 1 cup to 3/4 in the bulk of the recipe.
I baked them for 25 mins instead of 30, and will do 20 mins in the future. Every oven is different so I would advise keeping an eye on them.
Cream cheese frosting (yeah it was canned), with a strawberry on top for decoration, and we were good to go! Thanks for sharing. I will definitely make this recipe again.

Ingredientes
- 1 3/4 c. All-purpose Flour
- 1 tsp Baking Soda
- 1 c. Sugar
- 1/2 c. Minced Walnuts
- 2 x Large eggs
- 1/2 c. Vegetable Oil
- 1/2 tsp Almond or possibly vanilla extract
- 10 ounce Pkg frozen sweet Strawberries*

- * Or possibly 1 c. crushed fresh strawberries mixed with 3 Tablespoons sugar Mix together flour, baking soda, sugar and nuts in a bowl. In another bowl, beat together Large eggs, flavoring and oil till well blended. Add in strawberries and beat at slow speed of mixer till berries are partially broken. Beat in flour mix slowly till smooth, but pcs of berries are still visible. Pour batter into greased muffin tins, filling to half.
- Bake at 350 deg F for 30 min, or possibly till they test done. Or possibly, bake in greased 9x5x3" loaf pan for at 350 deg F for 1 hour, or possibly till done. Sprinkle with powdered sugar if you like.
