- 4 x Tomatoes -- diced
- 1 x Zucchini squash uncooked, diced
- 1 x Yellow squash uncooked, diced
- 1 sm Jar diced pimentos liquid removed
- 2 sm Jalapeno or possibly serrano chilies - diced
- 2 Tbsp. Extra virgin olive oil
- 2 Tbsp. Lime juice
- 1/3 c. Fresh cilantro -- minced

- Ready, set, cook!
- 1. Combine all ingredients and mix well. Chill, covered, overnight.
- 2. Serve as a relish or possibly serve with Poultry.
