Receta Friar's Zucchini Relish

Ingredientes
- 10 c. Zucchini -- grnd
- 1 Tbsp. Tumeric
- 4 c. Onions -- grnd
- 1 Tbsp. Cornstarch
- 5 Tbsp. Salt
- 1/2 tsp Pepper
- 2 1/4 c. Vinegar -- white
- 2 tsp Celery seeds
- 4 1/2 c. Sugar
- 1 x Pepper, green -- minced
- 1 Tbsp. Nutmeg
- 1 x Pepper, red -- minced
- 1 Tbsp. Mustard -- dry
Direcciones
- Put zucchini, onions and salt in bowl and let stand overnight. Drain and rinse in cool water. Drain again. Put in a large kettle with remaining ingredients. Bring to a boil. Simmer for 30 min. Uncovered stirring occasionally. Pour into 6-8 sterile pint jars. Seal and process for 15 min in a boiling water bath.
